Tomato Basil Wrap Quesadilla

First of all, it no matter what you put between two slices of grilled wraps with cheese, it's going to be delicious! LOL! In fact, I encourage you to mix and match whatever ingredients you have in your kitchen to your liking and grill those bad boys! However, if you'd like to try this beautiful baby above - you definitely will not be disappointed!


Much like her sister, the Spinach Wrap Quesadilla, this Tomato Basil Wrap is sure to please the pickiest of eaters! Whether you use this recipe or scraps from leftover dinner, quesadillas are always a win-win for those quick fixes.


This is a recipe I actually came up with after I ate all the spinach wraps, lol. This Tomato Basil Wrap Quesadilla recipe is fool-proof UNLESS, you’re horrible at flipping things in a skillet.







Ingredients:


Quesadilla


2-3 slices of Daiya Provolone (broke in pieces)

½ cup sweet clover shoots (sprouts*)

6 cherry tomatoes, sliced

1/4 cup green onion

3 slices Plant Based Bacon of your choice ( I used lightlife since that's what I had on hand)

Small handful of Fresh Italian parsley chopped*

Onion Powder

Garlic powder

Grapeseed Oil for cooking* (or plant based oil of your choice)


Guacamole

1 Avocado

2 Tbsp fresh Cilantro chopped (about a tiny handful)

1 Heaping* Tbsp GoVeggie Cream Cheese (or any plant based cream cheese of your choice)

1 tsp Lime Juice

Sea salt, black pepper, onion powder, garlic powder.


Salsa

I used a jarred, low sodium, pre-made salsa of my choice. Whether homemade or store bought, any salsa of your choice will work in this recipe.*


Sour Cream

I used a store bought, Tofutti Sour Cream, which, by the way, is one of the favs. However, you can use any plant based sour cream of your choice.



 


Instructions:



Quesadilla

1. 3 – 4 slices cup of Daiya Provolone

2. Place a small pan over med – med High heat. Add 2 ½ Tbsp grapeseed oil & sauté 3-4 slices of veggie bacon according to instructions & desired crispiness. When done -break bacon into small bits & set aside.

3. In large cast iron skillet, heat 1 Tbsp of the oil on med-high heat. Place 1 tomato basil tortilla into the skillet. Add slices of cheese whole or break into pieces, add cherry tomatoes, bacon bits, green onion, Italian parsley, dash of onion powder, dash of garlic powder & remaining cheese.

4. Top with 2nd tortilla & Flip. *Add a bit more of the bacon oil if needed*. Continue to grill & flip on each side until cheese is melted & oozing.


Guacamole

1. Chop Cilantro & set aside.

2. Slice 1 Avocado, remove inside seed & scoop both insides into a bowl.

3. Add 1 heaping tbsp Cream Cheese. Add cilantro & lime juice. Season to taste* with sea salt, black pepper, onion powder & garlic powder. Mix well. Adjust seasonings if needed.
